No Bake Chocolate Chip Peanut Butter Pie

The party season is among us!  That means friends, fun, and food!  With the food part though that might mean you have to bring/make something.  For some that’s easy and for others not so much.  I feel like I fall in between the two extremes.  I can make something pretty tasty but sometimes I don’t have time to make an amazing dish.  That is, until I found this recipe.  I initially found it on Pinterest after needing to make something fairly healthy for family members.  The original recipe can be found here.  My recipe isn’t quite as clean as hers but, it’s still tasty and very versatile in how you make it.  You can add ingredients, use cleaner ingredients, or go all out.  The beauty of it is that you can throw it together quickly and no matter what comes out it’s delicious!

To start you should gather your ingredients.

  • 5 oz. of cream cheese (low fat, non fat, or regular.  It’s up to you)

  • ½ a cup of confectioners sugar

  • ⅓ cup of peanut butter

  • 8 oz. of whipped cream (low fat, non fat or regular.)

  • Hershey’s syrup (not pictured)

  • Chocolate chips (not picture)

  • Graham cracker pie crust (or a variation of it)

Prep time: 20 minutes

Total time: 3 Hours

 

With a mixer, combine the cream cheese and confectioners sugar.  To make it easier to combine, let your cream cheese sit at room temperature or microwave it to make it softer.  The softer it is, the less mess it makes.

Next mix in the peanut butter.

Once that is done you are finished with your mixer.  You need a spatula to fold in the whipped cream.  Proper folding is different from mixing.  You want to gently scoop the whipped cream into the bowl and fold it over with the peanut butter until it mixes with the peanut butter.

Now you add the chocolate chips! I didn’t really measure out how many I put in.  Instead, I just eyeballed the amount.  It’s really what looks good to you.  You can add a little or you can add a lot.

Once that is finished it’s time to put it in your pie crust.  Scoop the mixture into the pie crust and spread it until it’s evenly distributed.  For a final touch, drizzle some chocolate syrup  onto the pie.  There’s no right or wrong way.  Make a pretty design or go for the less is more approach.  Set it in the fridge or freezer (depending on how quick you need the dessert) to set.
