Max’s Mammoth Muffins | Doctor Who Week

For almost a hundred years, mankind has been shaped and guided, his knowledge and ambitions strictly controlled by its broadcast news, edited by my superior, your master and humanity’s guiding light, The Mighty Jagrafess of the Holy Hadrojassic Maxarodenfoe. I call him Max! 

It’s no surprise that a show as big as Doctor Who will have some star-studded cameos and one of my favorites is in S01E07 of the reboot Doctor Who, “The Long Game,” where Mr. Simon Pegg (who is one of my favorite actors) debuts as the Editor. He plays a  maniacal businessman, PR genius, and henchman to the Mighty Jagrafess… to whom these muffins are named for. Pegg’s performance is pretty creepy (in a good way), but I’ll let you watch the episode and make your own call.

And for now, muffins.

These muffins are so named after the Mighty Jagrafess because they’re a little ugly, react crazily in heat, and become, well, mammoth. In truth they could be called “Chocolate Wake-up Muffins,” but since it’s Doctor Who Week and I came up with the recipe while watching this episode… they’re now called Max’s Mammoth Muffins. No judging!  

As far as recipes go this one is a little different. It takes only one bowl to mix everything in and you don’t even need a mixer… BUT… there’s a two stage baking process that might seem a little … daunting. DON’T LET IT SCARE YOU. These muffins aren’t too terribly sweet but they pack a punch and will help wake you up, especially on those crazy Monday mornings when you’re still hungover from the previous weekend. Three words: CHOCOLATE. COFFEE. GINGER.

So without further hibbity-jibbity, may I present the recipe for Max’s Mammoth Muffins:

Ingredients:

  • 1 ¾ cup of AP Flour

  • ½ cup of unsweetened cocoa powder

  • 1 cup of sugar, extra for dusting

  • 1 tbsp of vanilla extract

  • ½ cup of oil

  • ⅔ cup of hot, strongly-brewed coffee

  • 1 tbsp of ground ginger

  • 2 eggs

  • ⅔ cup of semi-sweet chocolate chips

The tops of the muffins are as tall, if not a little taller than the base of the muffin itself! YAY SCIENCE!

Directions:

  1. Preheat the oven to 425°F and grease your muffin tins. Don’t freak out at the high temperature. This will help your muffins climb and not spill out over your muffin tins.

  2. Mix your dry ingredients in a large mixing bowl.

  3. Once your dry ingredients are all mixed up, add in your eggs and oil and stir.

  4. After that add in your vanilla extract and hot coffee.

  5. Stir till the batter is 95% lump free then add in your chocolate chips. Note: Your batter will be quite thick, but that’s what we want – we’re not making cupcakes, we’re making muffins. You don’t want runny pancake-like batter or this recipe won’t work correctly. If you accidentally add too much coffee, add in some more flour.

  6. Scoop your batter in the muffin tins until it barely reaches the top. Don’t fret, it’s going to be alright if you follow my directions. Then sprinkle with a little white sugar to for the crust.

  7. *** IMPORTANT STEP *** Put in the oven and bake for 5-6 minutes. Your muffins should be rising above the muffin tins and start forming nice domes. Immediately turn down the heat to 350°F with your muffins still in the oven (keep the door closed) and bake for 13-15 more minutes.
  8. Check the centers with a toothpick to make sure that they come out mostly clean.

  9. Remove from the oven and let it cool slightly. Your muffins will continue to bake a little bit while they are resting in their pans. After about 5-8 minutes the muffins should pull away from the sides of the pan  (if greased properly).

  10. Enjoy and get ready to take on the day.
