Nerdship, I am not the best mate. (Shocking, I know!) I have a hard time remembering if my fiance’s birthday is the 27th or 28th (it’s the 27th. Facebook told me.), and for the last 3 months, I have been under the impression he was a year younger. Oof. -10 points for Ravenclaw. (I wanted to be a Gryffindor, but Pottermore says I’m a Ravenclaw.) So, today I am having a surprise birthday do-over for him, complete with dinner, champagne, apologies and a tiny cake.

Cast of characters: sugar, vanilla, flour, milk, cocoa, salt, egg, baking powder, oil. Not pictured: baking soda.

Measure all your “dry” ingredients into a bowl.

Add your “wet” ingredients (minus the water)…

…and stir until glossy and mostly lumpless.

Measure out ½ cup of boiling water…

and pour into your batter. Stir until well-combined and totally smooth.

Pour your very runny batter into a greased 6” cake pan.

Bake at 350 for 40 minutes or until a toothpick comes out mostly clean.

Let it cool completely, then pop it out of the pan.

Now, let’s glaze!

Melt dat butter. Crush dem pecans.

Then, stir in cocoa, milk, and powdered sugar. Stir until smooth.

Stir in pecans, salt and vanilla. Pour over your tasty little cake.

Ingredients
  • Cake:
  • 1 cup sugar
  • ¾ cup flour
  • 6 Tbsp (⅜ cup) cocoa powder
  • ¾ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup boiling water
  • Glaze:
  • ¼ cup chopped pecans
  • 2 tbsp butter
  • 1 tbsp milk
  • 2 tbsp cocoa powder
  • ½ cup powdered sugar
  • ¾ tsp vanilla extract
  • dash of salt
Instructions
  1. Stir together dry ingredients. Add in wet ingredients, except water. Stir until well-combined. Add water, stir until smooth. Pour into prepared pan, bake at 350 for 35-45 minutes.
  2. Melt butter. Add milk, cocoa and sugar. Whisk until glossy. Add pecans, vanilla and salt. Pour over cake immediately.
