Caramel Popcorn “Happened One Night”

Classic Movie Week is almost at its end, Nerdship, but I could not let it end without sharing one of my favorite classic movies: It Happened One Night.

It Happened One Night (1934) stars Claudette Colbert as a spoiled heiress who, like most spoiled heiresses, doesn’t want to stay locked inside her gilded cage. The movie begins with her trapped on her father’s yacht after she married a popular socialite (“You only married him because I told you not to,” says her father, and he’s not about to let her go before he gets the marriage annulled). Our young heiress is having none of it. She jumps ship and makes her way to shore, heading straight to the bus station to find her way back to her new husband, discovering a bit of herself and “the real world” along the way.

And that, Nership, is the meat of the plot. I know that doesn’t sound very interesting, but stick with me.

The first person our heiress meets on that bus is a run-down reporter played by none other than the dashing Clark Gable. I’ve told you before about my Southern roots, so it probably goes without saying that Gone with the Wind was on constant rotation in my childhood home. I knew Clark Gable was handsome. I knew he was a decent actor, and I knew he could be funny. But what I didn’t know until I saw It Happened One Night is that Clark Gable was the king of the one-liner.

It Happened One Night is one of the funniest old movies that I’ve yet seen. With hit after hit, the chemistry and comedy between the two star actors is intoxicating.

Just as intoxicating as caramel popcorn.

There are several different variations on caramel popcorn recipes. I’ve tried to take the best bits from each. The traditional version uses butter, corn syrup, and heavy cream. This one substitutes coconut oil, maple syrup, and coconut milk. So make yourself a bowl and sit down to nosh while you enjoy one of the funniest classic movies around. I’d love to hear what you think!

Ingredients:

  • two bags natural microwave popcorn

  • 2 tbsp coconut oil

  • ⅓ cup maple syrup

  • ½ cup light canned coconut milk

  • 1 cup roasted, salted peanuts

 

Directions:

1. Preheat your oven to 275F.

2. Heat the coconut oil and maple syrup over medium heat. Heat until boiling, stirring often so that it doesn’t burn. Boiling will give you that nice caramel flavor.CaramelPopcorn_nerdsandnomsense-2

3. Mix in the coconut milk and return to a boil for a minute or two.CaramelPopcorn_nerdsandnomsense-3

4. While you let the mixture cool for few minutes, pop your popcorn.

5. Pour one bag of popcorn (minus the unpopped kernels!) and the peanuts into a large bowl.

6. Gently add the caramel sauce, mixing as you go. It might wilt some of the popcorn, but that’s okay.

7. Stir in the second bag of popcorn (minus the unpopped kernels!). This will give you a bunch of fluffy pieces, in case some wilted.

8. Line a baking sheet with parchment paper and pour the popcorn mixture onto the sheet.CaramelPopcorn_nerdsandnomsense-5

9. Bake at 275F for 20-30 minutes, stirring midway through.

10. Let cool enough to handle and enjoy!
