Apple Cinnamon Oatie Bars

Ever have those days, Nerdship, where you are completely exhausted no matter how much sleep or coffee you have. I get those occasionally and, boy, do they suck. Luckily, I have Dori from Finding Nemo in my head constantly singing “Just Keep Swimming.” Keeping positive helps, but so does eating things that are good for you and what better than to start your day off with a tasty oatie bar.

These apple cinnamon “oatie” bars are perfect for a quick morning breakfast or a pick-me-up snack during the day. They are gluten-free and packed with fresh apples and oats. Each bar tastes just like a yummy bowl of apple-cinnamon oatmeal, which is perfect for me because that’s one of only two flavors of oatmeal I will eat on a regular basis – the other being brown sugar.

This treat was inspired by my continuing love for all things Firefly. If you read our Companion Cocktail post last week you’d know that the creators of Firefly have FINALLY continued the saga since Serenity – via comic book form. And let me tell you, IT IS SO AMAZING! I’ve read part one and I can’t wait for parts 2 – 4 to be published over the next few months. If you are a Firefly fan, go get this series – either as it comes out or get all of them after May.

Anywho, these bars are packed full of fresh apple bits – and can make a man out of a mouse, or at least I like to think so. So with out any further subliminal messages, keep reading for the recipe.

Makes: 12-16 oatmeal bars

Ingredients:

  • 1/2 cup of coconut oil

  • 1 cup of white sugar, (can be substituted for agave or honey)

  • 1 cup of unsweetened apple sauce

  • 3/4 cup of apple butter

  • Juice of 1/2 a lemon

  • 3 tbsps of vanilla extract

  • 3 cups of gluten-free oats

  • 1 cup of gluten-free flour

  • 1 tbsp of cinnamon

  • 1 teaspoon of apple pie spice

  • 1 tsp of baking powder

  • 1.5 tsp of baking soda

  • 1 apple, diced

Directions:

  1. Pre-heat your oven to 425F and place a piece of parchment paper on a baking sheet.
  2. In a mixer, combine your coconut oil, apple butter, applesauce, sugar, vanilla extract, cinnamon, and apple pie spice.
  3. In a separate bowl, combine your dry ingredients and mix thoroughly. Go ahead and add your dry ingredients to your wet ingredients and mix until incorporated. AppleCinnamonOatmealBars_NerdsAndNomsense (1 of 10)
  4. Dice up your apple, pour the lemon juice over it so that the apple doesn’t brown as fast.
  5. Add the apple bits in and gently fold them into the batter. Your batter will be thick, which is a good thing. AppleCinnamonOatmealBars_NerdsAndNomsense (2 of 10)
  6. Turn out your batter onto your baking sheet and spread into a rectangle. The batter will rise and expand a little bit so give it a bit of space around the sides of the pan. AppleCinnamonOatmealBars_NerdsAndNomsense (3 of 10)
  7. Bake at 425F oven for 9 minutes, turn down the heat to 350F and bake for an additional 15 minutes.
  8. Pull out of the oven and let cool, but remember, we’re not finished baking yet.
  9. Once your hunk-o-oatie-bars are cool enough to handle you’re going to cut them into 3″ squares, space them about an inch apart and then bake them for 20 more minutes at 325F or until they are mostly dried around the edges. AppleCinnamonOatmealBars_NerdsAndNomsense (4 of 10)
  10. Let your oatie bars cool for a little bit, and enjoy!
